From dense green beans to pods that are mostly air
Coffee's freight class walks down the supply chain with the product. Green (unroasted) beans in jute bags or supersacks are dense agricultural cargo — they pack tight and rate near class 70. Roasting changes the physics: heat drives off moisture and puffs the beans, so roasted coffee is measurably lighter per cubic foot than the green beans it came from, and bagged retail coffee, with its valve bags and display cases, lands higher still. By the time you reach single-serve pods, the freight is barely coffee at all — a K-cup is a thimble of grounds inside a plastic cup and a foil lid, and a pallet of them is mostly molded air.
That's a genuine three-to-four-class spread inside one commodity, all determined by processing and packaging rather than by weight of actual coffee. A roaster shipping green beans inbound and pods outbound is running two completely different freight profiles under one product name, and quoting either off the other's class is a reliable way to overpay or get rebilled.

Palletizing across the coffee spectrum
Bulk beans need almost nothing — supersacks and cased bags pack dense on their own; just build full pallets and keep them square. The work is all at the retail and single-serve end. Bagged retail coffee improves when cases are tight and palletized full rather than shipped as loose display-ready cartons. Pods are the hard case: their packaging is fixed by the retail format, so the only lever is consolidation — full master cartons, tight to the pallet footprint, no half-empty display trays riding along.
One category note worth pricing: valve-bag retail coffee and pods both carry real per-pound value, and the light classes they rate at already cost more per hundredweight. On higher-value specialty shipments, it's worth confirming whether the NMFC item and any declared-value coverage change the effective class before assuming the density number is the whole story.
